ROASTING

The roasting is compromised for drip coffee.
When coffee beans are brewed by hands, the taste is more easily changed than espresso. Therefore, the roasted coffee beans has to be clear on flavours in order to control brewing easily.

繊細なドリップコーヒーだからこそできる焙煎がある。ヒトの手によって抽出するドリップコーヒーは湯量や温度などの一つ一つの決定で味をコントロールできるのです。だからこそ豆が本来持つフレーバーを最大限に詰め込む。豆に詰め込まれた美味しいを自由に表現できるそんな焙煎を目指しています。

DRIP

There is not fixed recipes for our drip coffee. Each staff create own recipes based on what they want to express on Coffee flavours such as sweet, clean, fruity etc.
So that people who visit our coffee shop can enjoy different coffee with same beans.

ROASTING

The roasting is created especialy for espresso coffee.
We age the beans for 2 weeks or 2 month to put Co2 away from the beans. By doing so, the taste of coffee can be clean and sweet.

エスプレッソのための最適な焙煎を行っております。豆の抽出効率を上げるためにエイジングの期間を豆それぞれに設け、よりクリアで甘いコーヒー豆を提供。

ESPRESSO

Our espresso machine can control the level of extracting pressure. For example, light raosted beans tend to be used high presuure first to low pressure last in the process. Also, the temperture of water is under 90 degrees to reduce harsh acidity. These are only some part of our quality control.
Coffee beans can be changed by so many conditions in a good way or not. We dedicate carefuly to keep high quality coffee in a day by doing cupping taste, checking the espresso taste regularly in a day.
